Description
This Strawberry Crunch Salad is bursting with fresh flavors and textures. Juicy strawberries, creamy goat cheese, candied almonds, and pistachios all tossed with a bright champagne vinaigrette.
Ingredients
⅔ cup sliced or slivered almonds
3 tablespoons sugar
10 ounces arugula greens
8 ounces strawberries, hulled and quartered
1 avocado, chopped
2 ounces crumbled goat cheese
⅓ cup roasted salted pistachios, chopped
3 tablespoons champagne vinegar
½ lemon, juiced
2 tablespoons honey
1 teaspoon Dijon mustard
1 garlic clove, freshly grated
Pinch kosher salt and pepper
½ cup olive oil
Instructions
1. Place almonds in a nonstick skillet over medium heat. Add sugar and stir continuously for 6–8 minutes until sugar melts and almonds are coated. Transfer to parchment paper and cool.
2. Toss arugula with salt and pepper in a large bowl.
3. Add strawberries, avocado, goat cheese, pistachios, and cooled sugared almonds.
4. In a bowl, whisk together champagne vinegar, lemon juice, honey, Dijon, garlic, salt, and pepper.
5. Slowly drizzle in olive oil while whisking until emulsified.
6. Drizzle dressing over salad and toss well.
7. Serve immediately.
Notes
Store dressing in the fridge for up to one week.
For a heartier salad, add grilled chicken or shrimp.
Feta cheese can replace goat cheese if preferred.
