Ingredients
  

  • 1 cup 256g whole milk small curd cottage cheese (4% milkfat)
  • ½ tsp garlic powder optional, for extra flavor
  • ½ tsp onion powder optional, for extra flavor
  • ¼ tsp smoked paprika optional, for color and taste
  • Pinch of black pepper or red pepper flakes optional, for a spicy kick

Instructions
 

Preparation:

  • Preheat the Oven: Set your oven to 350°F (177°C). Line a large baking sheet with parchment paper to prevent sticking.
  • Prepare the Cottage Cheese: Using a spoon, stir the cottage cheese to evenly distribute the curds and remove excess moisture.
  • Flavoring (Optional): If you’re using seasonings, mix them into the cottage cheese before scooping.

Cooking Steps:

    Scoop and Spread:

    • Use a tablespoon or small cookie scoop to drop portions of cottage cheese onto the parchment-lined baking sheet.
    • Space them about 2 inches apart to prevent them from merging.
    • Flatten each portion with the back of a spoon, spreading it to about ⅛ inch thick.

    Bake Until Golden & Crispy:

    • Place the baking sheet in the middle rack of the oven.
    • Bake for 40-50 minutes, or until the chips turn a deep golden brown with slightly dark edges.
    • Check around 30 minutes to prevent burning.

    Cool and Crisp Up:

    • Remove from the oven and let the chips cool completely on the baking sheet.
    • They will continue to crisp up as they cool.
    • Enjoy!
    • Serve immediately, or store in an airtight container for later.

    Notes

    • For extra crispiness, use whole milk cottage cheese with at least 14g protein per ½ cup (higher protein means less moisture).
    • Avoid low-fat cottage cheese, as it contains more water and may result in softer chips.
    • If the chips turn chewy instead of crispy, bake for an extra 5-10 minutes at 325°F (163°C).
    • Best enjoyed fresh, but if they soften over time, reheat in the oven at 300°F (150°C) for 5 minutes.
