  • Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta al dente according to package instructions. Drain and set aside.

Blend the sauce: In a blender, add:

  • Cottage cheese
  • Milk
  • Cornstarch
  • Garlic powder & paprika
  • Half of the shredded cheddar cheese
  • Salt and pepper to taste
  • (Optional: Dijon mustard & Parmesan cheese)Blend until completely smooth.
  • Cooking Steps
  • Heat the sauce: Pour the blended sauce into a large skillet over medium-low heat. Stir continuously for 4-5 minutes until the sauce slightly thickens.
  • Melt the cheese: Add the remaining cheddar cheese to the sauce and stir until fully melted and creamy.
  • Combine with pasta: Add the cooked pasta to the skillet and stir well to coat every piece with the creamy sauce.
  • Taste & adjust: Add more salt, pepper, or additional seasonings if needed.
  • Serve immediately & enjoy! Garnish with extra cheese, crispy bacon, or fresh herbs if desired.

Notes

  • For a smoother sauce, ensure your cottage cheese is full-fat and well-blended.
  • For a baked version, transfer to a casserole dish, top with panko breadcrumbs & Parmesan, and bake at 375°F (190°C) for 10-12 minutes until golden brown.
  • To make it gluten-free, simply use gluten-free pasta.
