For the Marinade:
- 1/4 cup coconut aminos
- 1 tsp grated root ginger
- 2 garlic cloves finely chopped
For the Stir-Fry:
- 1 lb flank steak thinly sliced against the grain
- 1/2 lb broccoli florets
- 2 tbsp avocado oil or preferred cooking oil
- 1 tsp toasted sesame oil
- 1 tsp fish sauce
Preparation:
Marinate the Beef: Combine coconut aminos, ginger, and garlic in a bowl or resealable bag. Add the beef slices, ensuring they are well-coated. Marinate in the refrigerator for 1 hour.
Blanch the Broccoli: Bring a pot of water to boil. Add broccoli florets and blanch for 2 minutes. Drain thoroughly and set aside.
Cooking Steps:
Heat 1 tablespoon of avocado oil in a large wok or skillet over medium-high heat. Add the marinated beef and cook until browned, about 2-3 minutes. Remove and set aside.
In the same wok, add the remaining avocado oil and stir-fry the blanched broccoli for 3 minutes until crisp-tender.
Return the beef to the wok and pour in the reserved marinade. Stir-fry for an additional 2 minutes until everything is well-coated.
Add the fish sauce and toasted sesame oil. Stir to combine, then serve immediately.
- For a spicier version, add 1/2 teaspoon of red pepper flakes during cooking.
- Serve over cauliflower rice for a complete keto meal.
- If coconut aminos are unavailable, substitute with tamari or low-sodium soy sauce.
