Ingredients

For the Marinade:

  • 1/4 cup coconut aminos
  • 1 tsp grated root ginger
  • 2 garlic cloves finely chopped

For the Stir-Fry:

  • 1 lb flank steak thinly sliced against the grain
  • 1/2 lb broccoli florets
  • 2 tbsp avocado oil or preferred cooking oil
  • 1 tsp toasted sesame oil
  • 1 tsp fish sauce

Instructions

Preparation:

  • Marinate the Beef: Combine coconut aminos, ginger, and garlic in a bowl or resealable bag. Add the beef slices, ensuring they are well-coated. Marinate in the refrigerator for 1 hour.
  • Blanch the Broccoli: Bring a pot of water to boil. Add broccoli florets and blanch for 2 minutes. Drain thoroughly and set aside.

Cooking Steps:

  • Heat 1 tablespoon of avocado oil in a large wok or skillet over medium-high heat. Add the marinated beef and cook until browned, about 2-3 minutes. Remove and set aside.
  • In the same wok, add the remaining avocado oil and stir-fry the blanched broccoli for 3 minutes until crisp-tender.
  • Return the beef to the wok and pour in the reserved marinade. Stir-fry for an additional 2 minutes until everything is well-coated.
  • Add the fish sauce and toasted sesame oil. Stir to combine, then serve immediately.

Notes

  • For a spicier version, add 1/2 teaspoon of red pepper flakes during cooking.
  • Serve over cauliflower rice for a complete keto meal.
  • If coconut aminos are unavailable, substitute with tamari or low-sodium soy sauce.
