Ingredients
  

For the Chicken & Pasta:

  • 1 ½ pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 10 ounces penne pasta or your preferred pasta
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

For the Creamy Sun-Dried Tomato Sauce:

  • 3 tablespoons butter
  • 2 teaspoons garlic minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup sun-dried tomatoes drained and chopped
  • 1 teaspoon paprika
  • 2 teaspoons Italian seasoning
  • ¼ teaspoon red pepper flakes optional, for spice
  • Fresh basil chopped (for garnish)

Instructions
 

  • Step 1: Cook the Pasta
  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to package instructions until al dente.
  • Drain and set aside.
  • Step 2: Sear the Chicken
  • Season chicken with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken and cook for 6-8 minutes, until golden brown and fully cooked.
  • Remove chicken from the pan and set aside.
  • Step 3: Make the Sauce
  • In the same pan, melt butter, then sauté garlic for 30 seconds until fragrant.
  • Stir in flour and cook for 1 minute to form a roux.
  • Gradually whisk in chicken broth and heavy cream, stirring constantly.
  • Add parmesan cheese, sun-dried tomatoes, paprika, Italian seasoning, and red pepper flakes.
  • Simmer for 5 minutes until the sauce thickens.
  • Step 4: Combine & Serve
  • Return the cooked chicken and pasta to the skillet, tossing to coat everything in the sauce.
  • Cook for an additional 2 minutes, allowing the flavors to meld.
  • Garnish with fresh basil and extra parmesan cheese.

Notes

  • For a spicier kick, add extra red pepper flakes or a dash of hot sauce.
  • For a thicker sauce, let it simmer for an extra 2-3 minutes until desired consistency is reached.
  • For a lighter version, swap heavy cream for half-and-half or Greek yogurt.
