For the Chicken & Pasta:
- 1 ½ pounds boneless skinless chicken breasts, cut into bite-sized pieces
- 10 ounces penne pasta or your preferred pasta
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
For the Creamy Sun-Dried Tomato Sauce:
- 3 tablespoons butter
- 2 teaspoons garlic minced
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 cup sun-dried tomatoes drained and chopped
- 1 teaspoon paprika
- 2 teaspoons Italian seasoning
- ¼ teaspoon red pepper flakes optional, for spice
- Fresh basil chopped (for garnish)
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the pasta according to package instructions until al dente.
Drain and set aside.
Step 2: Sear the Chicken
Season chicken with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add chicken and cook for 6-8 minutes, until golden brown and fully cooked.
Remove chicken from the pan and set aside.
Step 3: Make the Sauce
In the same pan, melt butter, then sauté garlic for 30 seconds until fragrant.
Stir in flour and cook for 1 minute to form a roux.
Gradually whisk in chicken broth and heavy cream, stirring constantly.
Add parmesan cheese, sun-dried tomatoes, paprika, Italian seasoning, and red pepper flakes.
Simmer for 5 minutes until the sauce thickens.
Step 4: Combine & Serve
Return the cooked chicken and pasta to the skillet, tossing to coat everything in the sauce.
Cook for an additional 2 minutes, allowing the flavors to meld.
Garnish with fresh basil and extra parmesan cheese.
- For a spicier kick, add extra red pepper flakes or a dash of hot sauce.
- For a thicker sauce, let it simmer for an extra 2-3 minutes until desired consistency is reached.
- For a lighter version, swap heavy cream for half-and-half or Greek yogurt.
